We all get stuck in a rut sometimes. Last night listening to our insanely talented friend Traci Sepkovic/@tlsepkovic, a guest on the @wildlifeconversationspodcast, she talked about just that. Sometimes we feel unlimited creativity and other times we just hit a wall and no matter how bad we want to be out with camera sometimes it's good just to set it down for a while, recenter and get back at it. Todays frames are some that lend to being way more creative than just always using the "good light". Yes we all love a perfectly subject from the the front or coming at us straight into the lens but the older I get and the more I shoot I would rather shoot into the light looking for the truly special moments. My wife and I love anytime we get with wildlife, even without camera in the harsh light parts of the day just being out together is what it's all about, but when the light hits just right it is truly incredible what this planet can create. Whenever we are asked for advise the first thing we always talk about is shooting a proper exposure but do not be afraid to bend the rules and shoot many different styles, the worst thing that could happen is you just might take the frame of our life!

Солим и добавляем специи. У меня готовые домашние смеси, но вы можете добавить все по отдельности в молотом или толченом виде. Это чеснок, кориандр, паприка, чили, перец горошком и душистый, базилик, имбирь, мускатный орех. Если у вас чего-то нет - не беда, можно обойтись традиционными специями к мясу. Мясо у глухаря приятное, его не нужно забивать их вкусом. Добавила смеси специй три чайные ложки.
Несколько часов в маринаде и можно обжарить кусочки на сковороде. В маринад добавить стакан красного сухого вина. Мясо перед жаркой обсушите.
Сложить в сотейник или форму, нарезать морковь и залить 1 коробкой сливок 500 мл, я еще водички туда добавила. Сверху влить оливковое масло. Можно вместо масла нашпиговать кусочками сала. Если нет духовки или сотейника, мясо можно приготовить просто в кастрюле, или оригинально - в чугунке в печи.
Важно, чтобы мясо тушилось-томилось (!), т. е. кипело в сливках, а не запекалось. И таким образом почти 3 часа. За это время я доливала туда еще две коробки сливок с маслом, разбавленные немного водой. Мясо булькало в этом соусе и пузырилось, мешала и поливала сверху образовавшимся соусом.
К блюду на гарнир отлично подойдет картофельное пюре, жареная капуста, овощи свежие и душистый мягкий ржаной хлеб. Для любителей экзотических вкусовых ощущений рекомендую кусочки глухаря обмакивать в брусничный соус или джем. Рецепт можно поискать в сети. В данный момент не было брусники, но для праздника делаю так: свежую бруснику взбиваю в блендере с сахаром по вкусу и варю в кастрюльке буквально несколько минут. Приятного аппетита!
