A Night in Hippo Heaven By Donald J Stoner It is said that hippos kill more people in Africa than any other animal (if you exclude mosquitos). But does that qualify them to be classified as dangerous game. I have certainly had my doubts until, that is, an experience I had one night in a farmer’s field. There is no question that an animal that weighs two tons, can run up to 20 mph and has huge teeth, has the potential of being dangerous. The danger is highest if you happen to catch a hippo on the land. Water is their preferred environment and they seem less threatened there. I don’t think any predator will attack a full-grown hippo in the water, although a big croc will certainly snatch a small hippo given half a chance. On the other hand, lion, especially a large pride, will attack a hippo if they catch it on land. This may have something to do with hippo temperament when they are away from water. CHOOSING THE RIGHT HUNTING KNIFE 1. CLIP POINT KNIFE The tip on this knife curves upward and allows you to pierce the hide and cut a pattern. The pattern is the initial cut you make down each leg and up the belly before removing the skin. You can skin your animal with this knife but the shape of the blade tends to cut holes in the hide while skinning. This particular knife is a folding model, easy to carry in a pocket. 2. DROP POINT KNIFE This is your skinning knife. You’ll notice the tip doesn’t sweep upwards like a clip point knife. A drop point knife is less likely to accidentally poke through the hide. You can skin faster, without being as careful. Also notice the blade length. You don’t want too much blade on a skinning knife, it will just get in the way. This little knife has skinned an entire elk on more than one occasion. 3. CAPING KNIFE If you’re going to keep the hide or mount the head you’ll want a caping knife. How to Make Moose Jerky Moose jerky is delicious, nutritious and easy to make. The basic concept in my recipe is to take a quality cut of moose, slice it thin, marinate it for four hours and then remove the moisture from the meat in a dehydrator for four- to six hours at 155℉. Here’s how I make moose jerky: Ingredients 3 pound lean moose roast or steak 2/3 cup Worcestershire sauce 1/2 cup soy sauce 2 tbsp honey 2 tsp ground black pepper 1/2 tsp red pepper flakes 1 tsp onion powder Step 1 Using a meat slicer—I use a Weston Pro 320 10” Meat Slicer—cut your moose into 1/8-inch slices. I like using lean steaks and roasts from the rear quarter. Flank steak is another popular option. I’ve tried backstrap, but didn’t like it as well due to the fat marbling in the meat. Frozen, slightly thawed meat works best for slicing in a meat slicer. Step 2 In a medium bowl, mix all the ingredients (except the moose) until blended. The Cape Buffalo is considered by some to be the most dangerous of all of the Big Five. While he seems docile enough when viewed undisturbed in the herd, when agitated or wounded this bovine can be extremely aggressive, vindictive, and cunning. Found all over southern Africa in herds of various sizes, the buffalo can weigh up to 1800 pounds. He is primarily a grazer but an occasional browser who must drink every day. They favor the thick bushveld during the day, leisurely moving and grazing as they go. At night they tend to herd up to protect the young from their archenemy, the lion. Both sexes carry horns, however, the horns of a bull can be quite spectacular in spread, with a deep curl and a solid boss covering the forehead. Cows lack the boss, but can have a very wide spread; in fact, the world record buffalo on file in the Roland Ward record book is a cow with a spread of some 62 inches. PICK A SPOT An important but very simple way to make a better shot at a deer is to pick a spot. I used to just shoot at deer rather than shooting at a specific spot on the deer. This was partially because of inexperience and partially because of nerves. Had I incorporated picking a spot into my shot sequence, I would have a few more heads hanging on my wall. Today, when I draw back on a buck, I find a single hair I want my broadhead to split, and I don’t take my eyes off it until my fletchings disappear.
