свинина полужирная 2 кг.!
шпиг полутвёрдый 300 гр. !

Охотничьи колбаски Ингредиенты: говядина 2 кг.! свинина не жирная 1 кг.! свинина полужирная 2 кг.! шпиг полутвёрдый 300 гр. ! соль 5 ст.л. ! insta cure 2 ч.л. ! сахар 2 ст.л. ! перец чёрный 1 ст.л. ! корица 1/8 ч.л. ! чеснок 1 ч.л. ! белковые оболочки диаметром 21мм.,или бараньи черева! Пошаговый рецепт приготовления Берём мясо хорошего качества и режем на куски,размером под отверстие мясорубки! Ставим на мясорубку сетку с оверстиями 6мм. и пропускаем говядину на фарш! Меняем сетку на мясорубке на более крупную с отверстиями 12мм. и пропускаем свинину полужирную на фарш! Опять меняем сетку на мясорубке на ещё крупнее,с отверстиями 18мм. и пропускаем не жирную свинину на фарш! Последний раз меняем сетку на более крупную с отверстиями 22мм. и пропускаем шпиг на фарш! Шпик полутвёрдый нужно предварительно заморозить,и пропускать замороженным,тогда он будет не большими кусочками! В сухой посуде смешиваем: Соль,insta cure,сахар,перец чёрный,корицу и чеснок! Смешиваем специи с фаршем и хорошо вымешиваем,помещаем в холодильник на 24 часа! Через сутки достаём фарш и ещё раз вымешиваем,ставим на мясорубку трубку для наполнения оболочек фаршем! Наполняем оболочки фаршем не очень плотно,так чтобы после можно было перекручивать каждые 40см. формируя колбаски! Прежде чем коптить даём полежать колбаскам 2 часа при комнатной температуре! Первые 2 часа коптим при температуре 45 градусов,за-тем постепенно в течении 4х часов подымаем температуру до 75 градусов! Постоянно смотрим за температурой в нутри колбасы,как только температура достигла отметки 66 градусов,колбаса готова! Достаём колбасу и развешиваем в проветриваемом помешении на 48 часов,за-тем помещаем в холодильник! Удачи и приятного аппетита ! ! !
