SHCHI – Russian Sauerkraut soup with wild meat and porcini mushrooms. This traditional Russian recipe, like many other recipes of Russian cuisine, may seem very strange. But believe me, Russians know a lot about winter warming soups. It just needs to be tried! This strange combination of seemingly incompatible ingredients creates the uniqueness of Russian cuisine, which is replete with nutritious and vitamin-rich dishes in the cold season. I got this unusual version of the traditional Russian soup as a result of an experiment that exceeded all expectations. I decided to add wild roe deer meat and porcini mushrooms to the classic cabbage soup recipe, which gave the dish a special tenderness and rich taste and make it a real hunting recipe. Russian sour cabbage soup, or SHCHI, that I prepared using wild roe deer meat hunted in Belarus, is a unique interpretation of this classic dish. To enhance the flavors, I added cranberries from the Nalibokskaya Pushcha, known for their vibrant ta

Wild hare hunting Morocco: A Hunter’s Tale from the Wild Plains I still remember the morning air—cool, dry, and laced with the scent of wild thyme. The sun hadn’t yet crested the horizon when we set out across the scrublands near Benslimane, rifles slung, dogs eager, and hearts pounding. Hare hunting in Morocco isn’t just a sport—it’s a ritual, a test of patience, instinct, and respect for the land. --- 🐇 The Moroccan Hare: Elusive and Legendary The North African hare (Lepus capensis) is a master of deception. Unlike rabbits, hares don’t burrow—they rely on camouflage and speed. Their lean bodies and powerful hind legs make them lightning-fast across rocky terrain. In Morocco, they’re most active at dawn and dusk, preferring solitude and silence. Locals say, “If the hare ran straight, no man could catch it.” And they’re right. These hares thrive in grasslands, vineyards, cork oak forests, and even semi-arid zones. They’re solitary, nocturnal, and notoriously clever. You won’t fin

How to Make Moose Jerky Moose jerky is delicious, nutritious and easy to make. The basic concept in my recipe is to take a quality cut of moose, slice it thin, marinate it for four hours and then remove the moisture from the meat in a dehydrator for four- to six hours at 155℉. Here’s how I make moose jerky: Ingredients 3 pound lean moose roast or steak 2/3 cup Worcestershire sauce 1/2 cup soy sauce 2 tbsp honey 2 tsp ground black pepper 1/2 tsp red pepper flakes 1 tsp onion powder Step 1 Using a meat slicer—I use a Weston Pro 320 10” Meat Slicer—cut your moose into 1/8-inch slices. I like using lean steaks and roasts from the rear quarter. Flank steak is another popular option. I’ve tried backstrap, but didn’t like it as well due to the fat marbling in the meat. Frozen, slightly thawed meat works best for slicing in a meat slicer. Step 2 In a medium bowl, mix all the ingredients (except the moose) until blended. I use a whisk to integrate the honey into the liquid. Pour the mix

Farewell to My Beloved Gitane – 13 Incredible Years Au revoir ma belle Gitane, my first draht, and a dog with an exceptional passion. For 13 years, you showed an incredible spirit and strength. Whether pulling a wild boar from a thicket or catching it minutes later in a pond in the middle of the plains, your power and persistence never failed. In the same day, you'd point out woodcocks, and I might have missed them, but you were always spot on. You've endured so much, with countless staples because nothing could stop your sheer will. You've also left behind a legacy, producing amazing dogs with Clint du Moulin de Berlemont: Jasper, Lacoste, Laïka, Lisière, N'Gumper, Nestor, and Oural. You were so full of trust, even staying loose in the back of the pickup truck on the highway, heading to Aisne for breeding. You truly earned your honors, my old Gitane. Your legacy lives on in every hunt, every memory, and every pup you've brought into this world. #DrahtHaar #HuntingDogs #FarewellToA

🇺🇸 An epic hunt that gave us the opportunity to explore some incredible and untouched areas, where we found not only plenty of Marals, but an adventure like no other. Not every day one gets the privilege of hunting on these beautiful mountains surrounded by wolves, bears, ibex, and wild boars amongst other creatures. This majestic and huge bull was spotted on our first hunting day, and from that moment we knew he was the one we wanted, which somehow, made our adventure even more special. Trophy aside, the way this Maral patrolled his area was a clear sign of dominance and no other bull dared to confront him during the 3 days we tried to cut distance with him. Regarding the trophy, the weight of the antlers -despite having to wait for the skull to dry out completely, where the expected weight loss could be up to 2 kg- proves this will clearly be the biggest Maral harvested in the area this year. Luck is an important factor, but without attitude and resilience, none of this would have

Hunting Up Above the Clouds It is the view of many hunters that mountain hunts are the ultimate expression of hunting. Here you will be challenged at all levels. Physically, mentally, technically. with many long distance shots, and in your understanding of game behavior. At the same time it is difficult not to be smitten by the magic of the mountains and their wild beauty. Mountaineers often say that they become physically addicted to the mountains, something most mountain hunters wholeheartedly agree with. It is also up in the mountains that you can find many of the most sought after trophies win the world; Marco Polo-Sheep, Dall Sheep/Stone Sheep, Snow Sheep, Blue Sheep, Mountain Goats perhaps the mighty Markhor or one of the many sub species of Ibex; Asiatic, European and Spanish. One thing that most of these species have in common is that they live in some of the most isolated parts of the planet, such as Kyrgyzstan, Alaska, Canada, Tajikistan or even the Himalaya. Catchable Trout Streams The Iowa DNR stocks more than 300,000 catchable-sized rainbow trout in 50 Northeast Iowa streams each year from April through October. More than 600 extra brood trout, weighing over 2 pounds each, are also released in small numbers into each stream. The number of trout stocked into each area varies, depending on length of the stream and how many anglers use the area. These criteria also determine how often each area is stocked. Surveys show there are still good numbers of trout several days after the most recent stocking and throughout the winter. Along with the stocked trout, many areas have good to excellent numbers of wild brown trout that challenge even the best anglers. Brown trout up to 20 inches are possible. Trout streams will receive both announced and unannounced stockings. There has been no change to the frequency of stockings or the number of fish stocked at any of our trout streams. Moving to unannounced stockings has given DNR fisheries staff mor

Youth have more time to complete hunter education while still hunting this fall. Any youth (age 17 and younger) who has completed an online hunter education class will be able to hunt on their own tag, even if they haven’t completed the required in-person field day. With fewer hunter education classes/field days offered this year due to COVID-19, Oregon Department of Fish and Wildlife will defer the field day requirement for youth hunters for the 2021 hunting season. The field day will still be required to get a hunter education certificate, but can be delayed until after hunting season. “This will provide additional time for any young hunter to get their hunter education certification,” said Antonio Salgado, ODFW Recruitment/Retention/Reactivation Coordinator. “They will still have to complete a field day to be fully certified.
