Cube the meat into pieces that are about the size of a golf ball. “Cold pack” the raw meat into the quart jar, leaving about 1 inch of headspace. Use a spoon to tightly pack in the meat. Don’t add any liquid, as the meat will create natural juices during the canning process. Put 1 teaspoon of non-iodized salt, ¼ teaspoon of black pepper, and two cloves of garlic on top of the meat. Adding a few slices of green pepper or onion is optional, and note that a little bit of flavor while canning will go a long way. Place on lid and screw on ring. Put your jars in the canner. Follow the directions that are specific to your pressure canner, which will suggest something like adding three quarts of water, and canning for 90 minutes at 15 pounds of pressure. But if your idea of fun is hitting more doves, choose a 12- or 20-gauge with some heft and at least a 28-inch barrel. A longer, heavier gun swings smoothly, points surely and soaks up recoil. The best dove shooting I did this past year was with a 12-gauge sporting clays gun. 2. Stock Up On Shells Ammunition is available again, and there’s no reason to run out opening day, which I have actually done. Begging shells from people in the field is just embarrassing. Field or target loads of Nos. 7½ or 8 lead or 6 or 7 steel work. Steel loads kill fine, by the way. Lighter loads, with less shot and lower velocities, kick a lot less than heavy, high-speed stuff, and you will shoot a lot in no more padding than a T-shirt. How to Make Moose Jerky Moose jerky is delicious, nutritious and easy to make. The basic concept in my recipe is to take a quality cut of moose, slice it thin, marinate it for four hours and then remove the moisture from the meat in a dehydrator for four- to six hours at 155℉. Here’s how I make moose jerky: Ingredients 3 pound lean moose roast or steak 2/3 cup Worcestershire sauce 1/2 cup soy sauce 2 tbsp honey 2 tsp ground black pepper 1/2 tsp red pepper flakes 1 tsp onion powder Step 1 Using a meat slicer—I use a Weston Pro 320 10” Meat Slicer—cut your moose into 1/8-inch slices. I like using lean steaks and roasts from the rear quarter. Flank steak is another popular option. I’ve tried backstrap, but didn’t like it as well due to the fat marbling in the meat. My buddies and I had been on plenty of trips together before but never to Texas! Between the four of us and gear for six (two of our team opted to fly from New York to San Antonio), every single spare inch of space in the truck had been utilized. With each of us taking turns driving, we made it to Texas in about 20 hours. We got dinner and hotel rooms in Texarkana, and were back on the road early the next morning. With a day to spare before we were due at our hunting camp in Hondo, Texas, we headed south with plans to enjoy the city of San Antonio along the way. In San Antonio, we explored the Alamo, the River Walk and the Buckhorn Saloon and Texas Ranger Museum. What a great city!
