Pikantní grilované jelení srdce na peruánský způsob 500 g jeleního srdce na marinádu: 2 najemno nastrouhané stroužky česneku, 4 lžíce červeného vinného octa, 3 lžíce olivového oleje, lžíce chilli pasty, lžička dijonské hořčice, ½ lžičky mletého koření na zvěřinu, ½ lžičky mletého římského kmínu, sůl Důkladně očištěné jelení srdce nakrájíme na menší kousky. Všechny suroviny na marinádu vložíme do misky a metličkou prošleháme. Pak do ní vložíme nakrájené srdce a nejméně na hodinu, ideálně na noc uložíme do chladničky. Marinované kousky srce napíchneme na špejle a na rozpáleném grilu potřeném olejem opékáme z každé strany asi 3 minuty. Během grilování potíráme marinádou. Podáváme s peruánskou omeletou tacu tacu a peruánským zelným salátem s fazolemi. Peruánská omeleta tacu tacu 130 g rýže, 150 g plátků anglické slaniny, 2 vejce, 1 šalotka, lžíce oleje, mletý pepř, sůl Rýži uvaříme doměkka, scedíme a necháme ji odstát.
